How to Make Plantain Lasagna
1. Slice the Plantains

Slice them lengthwise or into long pieces of relatively even thickness.
You want the slices to be sturdy enough to form layers without breaking apart.
2. Lightly Fry the Plantains
Heat vegetable oil in a frying pan over medium heat.
Add the sliced plantains and fry until they become lightly golden on both sides.
Don’t fry them until they’re very dark.
Remember, the plantains will finish cooking in the oven, so they only need enough frying to develop some color and flavor.
Remove the fried plantains and place them on a paper towel-lined plate to absorb excess oil.
