How to Make Gizzard Fried Rice
1. Cook and Season the Gizzard
Clean the gizzards thoroughly and place them in a pot.
Add the chopped onion, curry powder, thyme, seasoning cube, salt, and enough water to cook the gizzards.
Cover and cook until the gizzards are tender.
Once they are cooked, continue cooking uncovered for a few minutes until most of the liquid has evaporated. You want the seasoning and cooking juices to coat the gizzards rather than leaving them swimming in stock.
2. Lightly Fry the Gizzard

Heat a little vegetable oil in a frying pan.
Add the cooked gizzards and fry them lightly until they develop a little colour.
Don’t over-fry them. The goal is to give them a lightly browned exterior while keeping the inside juicy and tender.
Remove the gizzards from the pan and set aside.
If there is too much oil left in the pan, reduce the amount before continuing.
3. Fry the Aromatics and Vegetables

Using the same pan, add the chopped onion.
Fry for a minute or two until fragrant.
Add the green bell pepper, Scotch bonnet, garlic, and ginger.
Season with a little curry powder, thyme, seasoning powder, and salt if needed.
Stir-fry the vegetables for a few minutes. You want them cooked but still slightly colourful and crisp rather than completely soft.
4. Prepare the Rice

In another large pot or frying pan, heat about 2 tablespoons of vegetable oil.
Add your cooked, cooled rice.
Pour in the soy sauce and toss gently so the sauce is distributed throughout the rice.
Add a little curry powder and seasoning if needed.
Stir-fry the rice over medium heat for a few minutes.
If you’re using mixed vegetables such as carrots, peas, or sweet corn, you can add them at this stage and toss everything together.
5. Bring Everything Together

Add the fried vegetables and lightly fried gizzards to the rice.
Toss everything together gently, making sure the gizzard and vegetables are evenly distributed.
Allow everything to stir-fry together for another 2–3 minutes so the flavours can come together.
Taste and adjust the seasoning if necessary.
And that’s it your Gizzard Fried Rice is ready!

Tips for Making the Best Gizzard Fried Rice
Don’t overcook the gizzard
Gizzard can become chewy when overcooked or aggressively fried. Cook it until tender, then fry it lightly just to add colour and flavour.
Let the rice cool first
Cold or chilled cooked rice is excellent for fried rice because the grains are firmer and less likely to become mushy when stir-fried.
If you’re cooking rice specifically for this recipe, cook it with slightly less water than you normally would so the grains remain separate.
Don’t add too much soy sauce
Soy sauce provides colour and a deep savoury flavour, but too much can make the fried rice overly salty and dark.
Start with a small amount and add more if needed.
Keep the vegetables slightly crunchy
The vegetables should still have some texture after cooking. Avoid cooking them until completely soft.
Adjust the pepper
Scotch bonnet gives the fried rice a lovely Nigerian-style kick. If you don’t eat much pepper, reduce the quantity or remove the seeds.
Variations and Substitutions
Add more vegetables: Carrots, peas, sweet corn, spring onions, and bell peppers all work beautifully.
Make it extra spicy: Add another Scotch bonnet or a little ground pepper.
Use leftover rice: This recipe is perfect for transforming leftover plain rice into a completely new meal.
Add protein: You can combine the gizzard with cooked chicken, shrimp, prawns, or scrambled eggs for an even more substantial fried rice.

What to Serve with Gizzard Fried Rice
This fried rice is filling enough to enjoy on its own, but you can serve it with:
- Fried or grilled chicken
- Fried plantain
- Coleslaw
- Grilled fish
- Moi moi
- Chicken wings
- A simple vegetable salad
For a party-style spread, pair it with your favourite grilled protein and some chilled drinks.
Storage & Reheating
Allow leftover fried rice to cool before transferring it into an airtight container.
Keep it refrigerated and consume within 3–4 days.
To reheat, warm it thoroughly in a frying pan over medium heat. Add a tiny splash of water or oil if the rice has become dry, then stir until steaming hot.
You can also reheat individual portions in the microwave.
For food-safety guidance on storing cooked meat and leftovers, the USDA recommends refrigerating cooked leftovers within the appropriate time and generally using them within 3–4 days.
Frequently Asked Questions (FAQs)
Can I use leftover rice for gizzard fried rice?
Yes. Leftover chilled rice is actually excellent for fried rice because the grains are firmer and less likely to become mushy during stir-frying.
How do I keep my gizzard tender?
Cook the gizzard until tender before frying it, then fry it lightly rather than leaving it in hot oil for too long. Over-frying can make gizzard tough and chewy.
Can I make gizzard fried rice without soy sauce?
Yes. You can leave out the soy sauce and rely on your seasonings, curry powder, vegetables, and gizzard stock for flavour. The colour will be lighter, but the fried rice will still be delicious.
What vegetables can I add to fried rice?
Carrots, peas, sweet corn, green beans, spring onions, and different coloured bell peppers are all great options.
How long can I keep gizzard fried rice in the fridge?
Store it in an airtight container in the refrigerator and use it within 3–4 days. Reheat it thoroughly before serving.
Can I make this fried rice spicy?
Absolutely. Scotch bonnet already gives it a nice Nigerian-style heat, but you can increase or reduce the amount depending on your preference.
