How to Make Plantain Egg Bake

1. Prepare the Plantains

Peel the plantains and slice them into diagonal pieces or medium-thick slices.

Sprinkle lightly with salt if you enjoy salted plantain.

Heat a little vegetable oil in a wide frying pan over medium heat.

Arrange the plantain slices in the pan and shallow-fry until golden brown on both sides.

You don’t need to make them extremely dark or crispy. The goal is to get a beautiful golden colour while keeping the plantain soft and delicious inside.

Remove the fried plantains and set them aside.

2. Reduce the Oil

Check the amount of oil remaining in the pan.

If there is too much, carefully remove some, leaving just enough to sauté the vegetables.

Keeping a little of the plantain-flavoured oil in the pan also adds extra flavour to the egg mixture.

3. Sauté the Aromatics

Add the chopped onion to the pan.

Stir and cook for about 1 minute, or until the onion becomes fragrant and slightly softened.

Add the chopped green and red bell peppers together with the habanero or Scotch bonnet.

Stir-fry for another minute or two.

4. Add the Ginger, Garlic and Seasoning

Add the ginger and garlic paste.

Season with your seasoning cube or seasoning powder and a little salt if needed.

Stir everything together and allow it to cook for another minute.

At this stage, the kitchen should already smell amazing!

5. Beat the Eggs

Crack the eggs into a bowl.

Add a small pinch of salt and whisk until the yolks and whites are completely combined.

You don’t need to overbeat them. Just make sure the mixture is smooth and evenly mixed.

6. Add the Eggs to the Pan

Pour the beaten eggs directly over the sautéed vegetables.

Reduce the heat to low.

While the egg mixture is still wet, carefully arrange your golden fried plantain slices over the surface.

You can arrange them in rows or simply place them evenly across the top either way, you’ll end up with a beautiful-looking dish.

7. Add the Fresh Toppings

Sprinkle chopped spring onions over the plantains and eggs.

Add a few pieces of chopped bell pepper for extra colour and freshness.

If you enjoy spicy food, you can also add a little extra Scotch bonnet.

8. Cover and Cook

Cover the pan with a lid.

Allow the Plantain Egg Bake to cook over low heat until the eggs are completely set.

This should take approximately 5–8 minutes, depending on the size and thickness of your pan.

Keep the heat low. You don’t want the bottom of the eggs to burn before the top has cooked.

Oven Method

If you’d rather finish it in the oven, make sure you’re using an oven-safe skillet.

After adding the beaten eggs, plantains, spring onions, and peppers, transfer the pan to a preheated oven at 180°C (350°F).

Bake for approximately 8–12 minutes, or until the eggs are fully set.

Cooking time will depend on the depth of your pan and the amount of egg mixture you’re using, so keep an eye on it.

9. Serve

Once the eggs are fully cooked, remove the pan from the heat.

Allow it to rest for a minute or two before slicing.

Serve warm and enjoy your golden, savoury Plantain Egg Bake!

And the big question: are you eating it with your hands or bringing out the fork and knife?

Tips for Making the Best Plantain Egg Bake

Use ripe but firm plantains

Very soft, overripe plantains can become difficult to slice and may fall apart during frying.

Choose plantains that are ripe enough to be naturally sweet but still firm.

Don’t over-fry the plantains

You only need a golden-brown exterior. Over-frying can make them too dry, especially since they’ll continue cooking with the eggs.

Keep the heat low

This is particularly important after adding the eggs. Low heat allows the eggs to cook gently without burning the bottom.

Don’t add too much salt

The seasoning cube or seasoning powder already contributes salt, so taste carefully before adding extra.

Give the eggs room to cook

If your pan is very small and the egg layer is extremely thick, the bottom may cook much faster than the top. A wide skillet works best.

Variations and Substitutions

Add vegetables

You can add diced tomatoes, sweet corn, spinach, mushrooms, carrots, or spring onions.

Add protein

For a more filling meal, add cooked shredded chicken, diced sausages, corned beef, prawns, or leftover grilled meat.

Make it cheesy

Sprinkle some grated cheese over the eggs before covering the pan. Cheddar, mozzarella, or a mild Nigerian-style cheese can work beautifully.

Make it extra spicy

If you love heat, increase the habanero or Scotch bonnet. You can also add a little ground black pepper.

Make it completely oven-baked

Instead of cooking it on the stovetop, sauté the vegetables, add the eggs and plantains, then transfer everything to the oven until set.

What to Serve with Plantain Egg Bake

This dish is filling enough to enjoy on its own, but you can serve it with:

  • Fresh fruit
  • Avocado
  • Tomato and cucumber salad
  • Toasted bread
  • Tea or coffee
  • Fresh fruit juice
  • Smoothies
  • Sausages
  • Grilled chicken

Storage and Reheating

Allow any leftovers to cool before transferring them into an airtight container.

Store in the refrigerator and enjoy within 3–4 days.

To reheat, warm individual portions gently in a frying pan over low heat or use a microwave until heated through.

Because this recipe contains cooked eggs, avoid leaving leftovers at room temperature for extended periods.

Frequently Asked Questions (FAQs)

Can I bake Plantain Egg Bake instead of cooking it on the stove?

Yes. If you’re using an oven-safe skillet, you can transfer the dish to a preheated 180°C (350°F) oven and bake until the eggs are completely set, usually about 8–12 minutes.

What type of plantain should I use?

Use ripe but firm plantains. They should be naturally sweet but firm enough to slice easily and hold their shape when fried.

Can I use very ripe plantains?

You can, but very ripe plantains are softer and sweeter and may break apart more easily. Firm ripe plantains are easier to slice and arrange over the eggs.

Can I add other vegetables to this recipe?

Absolutely. Carrots, tomatoes, sweet corn, spinach, mushrooms, peas, and extra bell peppers can all be added to the egg mixture.

Can I add meat to Plantain Egg Bake?

Yes. Cooked shredded chicken, sausage, prawns, corned beef, or leftover grilled meat can be added to make the dish even more filling.

How do I stop the eggs from burning underneath?

Keep the heat low once you add the eggs and cover the pan. A wide, heavy-bottomed pan also helps distribute the heat more evenly.

Can I make Plantain Egg Bake ahead of time?

Yes. You can prepare it ahead and refrigerate it in an airtight container. Reheat gently before serving and consume within 3–4 days.

Final Thoughts

If you’re a true plantain lover, this Plantain Egg Bake is another recipe to add to your list.

The sweetness of the golden plantain works so well with the savoury, spicy egg mixture, while the peppers, onion, ginger, garlic, and spring onions add plenty of flavour and freshness. It’s simple enough for a weekday breakfast but special enough for a relaxed weekend brunch.

And don’t forget there are no strict rules about when to eat it. Breakfast, brunch, lunch or dinner? I’m not judging!
